What a great idea! This falls under the “why didn’t I think of that” category! Made these for an easy weeknight meal this week, and it was a big hit with the family and the cook (me!). We will use this again for sure!

These look great. There is a local bar here that serves something similar as an appetizer, except with kettle potato chips instead of baked potatoes. Will have to try this!
