I sliced the plantains about the thickness of a typical banana chip so perhaps it is the level of ripeness that determines whether they crisp or not.  Mine were just beginning to turn yellow with some small black streaks.  Do the plantains need to be all green for this recipe to work?]]></description>

		<description><![CDATA[Marilyn, plantain looks like a banana and can be marked as cooking bananas.    They are starchy.

The green ones are unripe and the ripe ones look like a beaten up banana.  They look bruised and marked up but they are supposed to look like that.]]></description>
