Description

Pan-seared tilapia made with a flaky crust of Parmesan and panko.

Ingredients

  • ⅓ cups Parmesan Cheese, The Small Crumbles
  • 1 cup Panko Bread Crumbs
  • ½ teaspoons Salt
  • ½ teaspoons Italian Seasoning
  • 2 Tablespoons Olive Oil
  • 3 whole Tilapia Fillets
  • ¼ cups Flour
  • 2 whole Eggs, Beaten
  • 1 whole Lemon, Cut In Half

Preparation

In a food processor combine the first 4 ingredients and mix for about 45 seconds. Move the mixture to a large flat dish.

Heat a large pan with 1 tablespoon of olive oil over medium heat.

Sprinkle flour over both sides of the tilapia fillets (use only as much flour as needed to cover both sides—I didn’t use it all).

Beat the eggs in a shallow bowl. Then dip the tilapia into the eggs and then place it in the Parmesan cheese and panko mixture. Turn the fillets over to make sure both sides are well coated. Place all of the fish into the hot pan.

Cook each side 3-4 minutes. Add another tablespoon of olive oil when flipping the fish. Remove the tilapia from the pan onto your plates. Top with fresh lemon juice.
