Description

These are my mom’s famous tacos. They aren’t famous outside of the family…. but they should be!

Ingredients

  • 1 pound Ground Beef
  • 3 whole Potatoes, Peeled And Diced
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Salt
  • 2 cups Water, Or More As Needed
  • 8 whole Corn Tortillas (two For Each Person)
  • Vegetable Oil, For Frying The Tortillas
  • Optional Taco Garnishes: Lettuce, Cheese, Salsa, Etc

Preparation

1. In a large sauce pan, brown the ground beef over medium heat. When the meat is browned, drain off excess grease and return to pan.
2. Add the potatoes, garlic, oregano and salt to the meat and stir to combine.
3. Add enough water to the meat/potato mixture so that it is almost completely covered (if it dries out during cooking, you can always add more water).
4. Bring the mixture to a boil over high heat then reduce and simmer until the mixture thickens and the potatoes are cooked.
5. Once it’s all cooked, mash it with a large spoon or a potato masher (the kitchen utensil, not the WWII era land mine).

You can use this Taco Pasta (as we call it) for tacos or burritos.

To make Mom’s Greasy Tacos:

1. In a large frying pan, add enough oil to cover the bottom of the pan and heat it over medium heat.
2. Take a room temperature corn tortilla, add about 2 tablespoons of Pasta to the tortilla and fold it in half. Lower the meat filled tortilla into the hot oil on one side with kitchen tongs. Let it cook until it’s brown then turn it onto the other side and cook until brown.
3. Be careful not to get any of the meat mixture into the heated oil – it will pop!
4. Drain the cooked tacos on paper towels, fill with cheese, lettuce or whatever you want and enjoy!
