I have a recipe for peppermint bark cookies I make every Christmas, and let me tell you, there is nothing like two of those cookies with chocolate ice cream sandwiched between them. 		<description><![CDATA[my most recent obsession is to make sgroppino with it - it&#039;s an italian cocktail, my mum made it for us at our last family dinner
you can find a few variations online, she used lemon ice cream (500ml), coconut milk (half of a can), a dash of vodka and a bottle of prosecco, mix everything in the blender for a few seconds and you&#039;ve got a great, creamy, frothy summer drink - which doubles as a dessert ;)]]></description>

		<description><![CDATA[A stand at our farmers&#039; market sells stacks of very thin (but surprisingly sturdy), crispy, chocolate cookies by the pound. They have a circular shape with pretty scalloped edges. During the summer, I keep a tin of them in the pantry (they stay fresh for a long time) and make ice cream sandwiches to order. Of course, once a big scoop of slightly softened ice cream is squished between two cookies, the edges of the ice cream can be rolled in the topping of choice (mini chocolate chips are a favorite). My favorite feature of these ice cream sandwiches is the cookies remain crisp.]]></description>

		<description><![CDATA[In summer, instead of having a mid-afternoon cup of coffee, I love a glass of ice-coffee - that&#039;s one or two scoops of vanilla ice cream in a tall glass of cooled coffee with whipped cream and chocolate shavings on top, sometimes a cherry, too. Kids love ice-chocolate, which is the same, but chocolate ice cream and chocolate milk.

I only do it when the husband is out of town, but one of my favorite ways to enjoy ice cream is to buy a pint of super premium in a flavor only I enjoy - butter pecan or lemon mousse - and eat it right out of the container with a spoon.  It&#039;s nice to feel like you&#039;re getting away with something once in a while.

My other favorite is something my brother and I did as kids, and my mother always clucked at us in disgust.  Put a couple of scoops of plain old chocolate in a bowl, let it melt a bit, and then stir it into the consistency of, say, sour cream.  Then dip good salty thin potato chips in it.  I know, disgusting, right?  NOT!  Think peanuts on a sundae; it&#039;s that salty/sweet thing at its best.  Don&#039;t judge me until you&#039;re tried it.]]></description>
