		<description><![CDATA[While there are lots of things that are terrific in the slow cooker, this beautiful Panang curry recipe is only going to take half an hour on the stove top (a little more for prep), while hours in the crock pot are going to leave me with overcooked chicken and mushy veggies. The brown rice is going to take about an hour, though. This looks like a perfect thing to prep and leave in the fridge (using slightly smaller pieces of chicken), then pop on the stove as soon as I get home. Now if I want to use pork instead of chicken, I might go the crock pot route, but those veggies are still going to be mush.]]></description>
