It takes just over an hour to smoke 2 1 lb fillets at 185 F (I use a meat thermometer to check that the fish is at about 160 F before turning off the smoker--salmon is safe to eat at internal temp 145, but hot smoked fish can be well-cooked and will keep several days in the fridge. Just be careful not to dry it out by overcooking). I always smoke at least twice as much as we will eat and share with friends or neighbors. Smoked salmon will be delicious in these tacos. Corn tortillas are a dieter&#039;s friend at about 50 calories per tortilla vs about 2.5 times that calorie count for flour tortillas. They are so delicious, if a bit fragile.]]></description>
