Don't you just love that so many ingredients that were "exotic" only a few years ago are now on grocery shelves even in smaller towns such as mine? I did these last night minus sriracha and red pepper flakes--this brand of Thai red curry paste was quite spicy on its own. I would say that if you are comfortable with a two chipotle peppers in about a cup of sauce, this was comparable--and just right for DH and me. Next time I might drop 1/2 of a T of the curry paste and add back the other 2 ingredients to get more of the taste this recipe goes for. Fresh basil is a good substitute for the cilantro--which I adore, but don't always have on hand. The flavor will be different, but equally Thai and equally delicious.

It's not traditional in any sense, but we love to make a version of Hawaiian Loco Moco. It hits all of the spicy, savory, comfort marks, and makes my Hawaiian Chinese husband happy as a clam (https://girlnamedallyn.wordpress.com/2014/09/02/loco-moco-remix/)
