oh my goodness! We take a pre-made oreo pie crust, and partially melt mint-chip ice cream - spread, and refreeze - couldn't be easier!

This is also great with a pre-made graham cracker crust with strawberry ice cream. Yummy!

I just rediscovered banana pudding from a Paula Deen recipe which uses Pepperidge Farm chess cookies as the base and top layer. The banana cream layer is soooooo gooooood! And, the cookies stay crisp for a solid 48 hr. No lie. Plus, I add unsweetened chopped coconut to make it a banana coconut cream pudding. It's amazing!

One of my favorite no-cook meal ideas for the summer months is to take the meat off of a rotisserie chicken and serve it on a tossed green salad, or turn it into chicken salad to serve on on soft rolls. Super easy.

Cooking in the summer is so hard, especially since I don't grill or slow cook, as many people will recommend. I usually start preparing for summer meals in April or May. I freeze cooked meats, beans, rice & pastas individually in portions ready to toss together in a meal. I also make egg burritos, rice & meat burritos, quinoa & meat or veggie burritos and bean burritos. I make & freeze soups and chili in individual portions, ready to heat and eat. We eat a lot of fish, so I cook and freeze some as well.
We eat sandwiches; peanut butter and banana is a favorite. Green salads, of course are easy.
And for dessert, I C E C R E A M !
