Being Vietnamese, I've had similar versions of "bun" but haven't made it for a while. Tried this recipe tonight and it was delicious. Hubby said it was "restaurant quality". The shrimp, cooked in the coconut oil, was fabulous.

I'd say the weak point was the dressing though. I think half the amount would have been sufficient for the serving size. I also much prefer Vietnamese "nuoc mam" which is similar to this dressing except there is no vinegar (I found the rice vinegar rather overwhelming and "off" in this recipe), garlic is used instead of ginger, and water is added. Next time I make the noodle dish, I'll dress it with nuoc mam instead.

Still, a wonderful recipe overall--thank you so much for sharing! Not only a great recipe but so beautifully presented!

Loved this recipe! My family loved it too. I had left over steak and made some shrimp too and served it on the the side so everyone could pick what the wanted.
Next time I too will cut back on the sauce. My guys also requested I go a little lighter on the rice vinegar.

Made this tonight and it was a big hit. However the next time I make it I will reduce the amount of fish sauce (or find a low sodium version). Part of the salad that were very saturated in dressing, were very salty.

Made this tonight for the Hubs and me. I didn't include the sprouts because the grocery store was out of stock. But, this was absolutely delish! What a great idea.

My mom and I made this for dinner tonight and it was fabulous! It was fresh, tasty, very flavorful. This will undoubtedly become a summer staple at our house.

I made this last night, and it was a big hit. I didn't have a red chili, so I used thai chili/garlic paste in the dressing. And I added grilled chicken, since my stash of frozen shrimp was a little low. I'll definitely add this to my repertoire of summer recipes. Thanks!!
