While the typical ceviche is indeed cooked in citrus juice, Ecuadorian ceviche typically uses shrimp, is often par-boiled in water (a practice that apparently began after a cholera outbreak), and uses ketchup for a more tomato-based sauce. Raw, cooked in citrus, or par-boiled, I like 'em all. :)

I love that you referenced Friday Night Lights...I watched all of the seasons in a period of 3 weeks last year. It's so addictive, and Tim Riggins is a beautiful specimen of a human being. Anyway...this dip looks incredible! I'm not a huge football fan, so I'm all about the Superbowl snacks!

I've also never seen ceviche with anything resembling cocktail sauce. And if it's supposed to taste similar to cocktail sauce then why use ketchup and hot sauce? Why not just toss with some cocktail sauce. And then rename the recipe. Boiled shrimp and red sauce is not ceviche.

It's driving me crazy that this is a "ceviche" recipe. Ceviche is NOT cooked first. The combination of citrus juices and other acidic ingredients is what denatures the seafood. If you cook the shrimp in boiling water first, then it's not ceviche. I

Ceviche is by definition raw fish 'cooked' in a acid such as lime juice. This is a very misleading recipe title as the shrimp is actually cooked in water.
