Made these as directed but without espresso powder & coffee – I took to a gathering and everyone raved about them. Definitely a keeper!

Have you ever tried freezing these cupcakes? I’m thinking of making it in bread form and freezing to have available after I give birth next month…just wondering if you think it’d be a good idea?? They look/sound delicious!

Made these this weekend – added two teaspoons of vanilla to the batter and used Cool Whip instead of whipped cream because it travels a little easier. They are AMAZING and perhaps one of the best things I’ve ever backed (and I bake a lot!).

What would be the result if I omit the coffee from the recipe? I really, really do NOT like the flavor of coffee/espresso in anything. I might just have to see for myself, the muffins look too good to pass on.
