Did anyone else have trouble removing these cookies from anything they touched?? I mean so impossible to get off parchment paper that I threw a lot away…

These are TOO good! I made them a bit smaller and got 4 dozen medium size cookies. I used salted butter plus 1/4 teaspoon salt and they were perfect.

I made these for a family vacation road trip snack. They were gone so fast!! The marshmallows get all melty in the cookies and taste like toffee, and the rice cereal gives it a bit of crunch inside the soft dough. I loved them, and will definitely make them again!

Here on my post Carmogeddon Monday in the City of Angels, I decided to give this recipe a try. Used semi-sweet chocolate chips (since I have them) and regular oats. Turned out pretty well… I do agree that it needs that pinch of salt (or maybe I should have used salted butter?), but they are delicious. I can see how you could also put in a few butterscotch chips. They will be enjoyed by the crew at work!

The recipe doesn’t call for salt, but I tossed a pinch in. I love salt in my cookies! Enjoy!
