Coffee flavoured pudding! Are you kidding me? That sounds sinfully delightful. I will have to try this out over the holidays. Do you think I could have it for breakfast or would that be going too far?

Carla, I'm pretty sure you should be able to substitute instant coffee if you can't find espresso powder. The main difference is that espresso powder is usually ground finer and has a deeper roasted flavor. You can boost the flavor by using anywhere from 25% to 50% more regular instant coffee (in this case, up to 2 1/2 to 3 tablespoons instant coffee instead of the 2 tablespoons espresso powder).

Instant coffee granules are also larger and may not dissolve evenly if mixed in dry. But this recipe calls for heating the coffee with the milk, so that shouldn't be an issue.

Hi Carla! You should use instant espresso (normal espresso granules would be way too strong!). I found mine at my local grocery store and it was actually store brand--nothing fancy! I bet you could substitute instant coffee in there, too! GL!

Thanks, Erika, for featuring the one and only pudding recipe that I'm good at making. You're the bestest!
