I never wrote the instructions down, so I scoured the web for a recipe like mine and came across this post. You did a lovely job of describing and photographing every step - you really captured every stage of the bubbling process. I&#039;m sure she is in good hands!

One question: have you tried it without water? My recipe differs from yours in that there is no water. I wonder if it changes the consistency.]]></description>

The visual steps for the caramel were really helpful; my candy thermometer needs replacing (a botched fudge recipe this weekend was the final straw) so to have this turn out perfectly without watching temperatures was nice. 

I used unsalted butter because that&#039;s what I had on hand for Christmas cookies, but added about a scant teaspoon of finely ground sea salt to the caramel. Definitely a nice touch.]]></description>
