Shaved Asparagus Pizza

Description

This was born out of necessity. I needed something to eat and I used what was in my fridge: some no-knead dough, some asparagus, some fresh mozzarella, and Boursin cheese (it was on sale). The result? Deliciousness.

Ingredients

  • 1 whole Batch Of Pizza Dough - Enough For 1 12-16 Inch Pizza
  • Extra Virgin Olive Oil, For Drizzling The Dough
  • 8 ounces, weight Fresh Mozzarella
  • 1 bunch Asparagus
  • 5-¼ ounces, weight Boursin Cheese (or Similar Herb And Garlic Spreadable Cheese)
  • Fresh Cracked Black Pepper

Preparation

Preheat oven to 450 F.

If not already shaped, stretch your pizza dough into a large circle 12-16 inches in diameter and place on your pizza pan or stone. Drizzle dough with a thin stream of olive oil.

Slice fresh mozzarella as thinly as possible and arrange in a single layer over dough.

Using a vegetable peeler shave your asparagus into thin ribbons. Use the entire bunch, as you might only get 3 or 4 good ribbons from each spear. Pile asparagus shavings on top of the mozzarella. The asparagus WILL cook down so you want to use more than you think is necessary.

Top asparagus with several cranks of black pepper and dot generously with Boursin cheese. (I tend to use 1/4-1/2 a package per pizza.)

Bake on pizza stone or baking sheet for 15-20 minutes or until crust is golden brown. Let cool for 2-3 minutes before slicing and serving.

I bake this on my pizza stone (it lives in my oven), but it really doesn’t matter what shape you make it. It tastes the same any way!

Since you’re using a rectangular baking sheet to support the pizza, why not make a rectangular pizza? They don’t have to be round – especially since you’re cutting it into little squares.

BTW, I found a mesh pizza pan (this one is round) at a restaurant supply store. This is not like the pizza pan with the holes in it, it is completely mesh. I use it in a Breville Smart Oven and it produces a very crispy crust. It’s like putting the pizza on the oven rack, but with more support. It cost just a couple of $. – very inexpensive.

This asparagus pizza sounds terrific.

This was so delicious! Tried it last night for “Meatless Monday” – prepped the crust with olive oil and garlic salt and added some red onions with the asparagus. Would definitely recommend getting the thicker asparagus if you have a choice – I ended up taking a knife to my thin little pieces! Even my fiance loved it and said he’d eat it on a night that wasn’t meant to be meatless…that means it’s GOOD!

Delicious! I’m making this for the second time tonight for guests. It has great flavor and is a wonderful way to get my picky husband to eat asparagus

This was really good. It was a pain to peel all of the asparagus since I had thin ones. But it was worth it. I wonder if a mandolin would have helped. I think next time I will try topping it with goat cheese instead. I was nervous that the asparagus wouldn’t cook properly but it did and I used loads of pepper which added to the taste. Oh I also used Ree’s dough recipe which came out great.

Wow. This was so good. It took more time to prepare than I expected because the asparagus didn’t peel very easily but it was worth it. I couldn’t find Boursin cheese so I used goat chevre instead (still rolled in herbs) and added some roughly chopped garlic cloves and sweet red onions to the top. I also used whole wheat pizza dough. I will definitely be making this again. Very healthy and very filling.

Great recipe! I kept coming back to this recipe, thinking I’d make it once I’d taken a trip to the store. This pizza compelled me to out get the ingredients; I was not let down! I added spinach, along with extra cheese. Amazing.. (Don’t skimp on the pepper, btw)
