Description

A great cold pasta dish for the summer!

Ingredients

  • 1 pound Bow Tie Pasta
  • 1 bunch Cherry Tomatoes
  • 1 whole Cucumber, Peeled And Sliced
  • 1 jar (small 4-6 Oz. Jar) Pitted Kalamata Olives, Whole Or Cut
  • 2 whole Chicken Breasts, Cooked And Cubed. (I Like To Use Store Bought Rotisserie Chicken)
  • 1 container (4 Oz. Container) Feta Cheese
  • 2-½ ounces, fluid Balsamic Vinaigrette Dressing (you May Need More, Depending On Your Taste)
  • ⅓ ounces, fluid Black Pepper To Taste
  • 1 pinch Salt, Or To Taste

Preparation

Cook the bow tie pasta and run cold water over it to chill. Place in the refrigerator for 10-15 minutes while you cook the chicken.

Mix in a large bowl the chilled pasta, tomatoes (slice tomatoes in half), sliced cucumber, pitted kalamata olives (whole or cut), cubed chicken, and feta cheese. Toss with balsamic vinaigrette dressing. Add salt and pepper to taste.

Serve cold.

This looks great! I’ve made something similar in the past substituting shrimp for chicken (takes the calories down slightly) and using lemon juice instead of balsamic — it’s so light and refreshing!
