Description

This ragin’ Cajun meatloaf is sure to mix things up in the dinner rotation. It’s one of those dishes where it can convert someone who is a self-proclaimed “meatloaf hater” into a “loaf lover”.

Ingredients

  • 2 pounds Lean Ground Beef
  • 1 pound Ground Pork
  • 3 whole Bell Peppers, Any Color
  • 2 whole Medium Onions
  • 5 stalks Celery
  • 8 cloves Garlic
  • 3 whole Eggs
  • 6 Tablespoons Butter
  • 2 cups Breadcrumbs
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cayenne Pepper
  • 1 Tablespoon Worcestershire
  • ½ cups Whole Milk
  • 2 cups Ketchup
  • 2 Tablespoons Honey
  • Hot Sauce, Optional

Preparation

Chop all of the fresh vegetables (peppers, onions, celery) into a small dice and mince the garlic.

Over a medium-high heat melt 6 tbsp. butter. Once butter begins to start browning, add the diced vegetables and garlic. Add about 1 tbsp. salt.

After these have cooked for a few minutes add 2 tbsp. Worcestershire sauce, 1 tsp. black pepper, 1 tsp. cayenne pepper, and 1 tsp. ground nutmeg. If you like it hot, add in a couple shakes of your favorite hot sauce.

Next, add in 1/2 cup of ketchup. Continue cooking and stirring for a few more minutes and then remove from heat.

After allowing the mixture to cool for a couple of minutes add about 1/2 cup of milk. Stir until combined.

Next, add at least 1 cup of bread crumbs. Continue adding bread crumbs and stirring until mixture is a nice, thick paste.

In a large mixing bowl place the ground beef and pork and combine.

Whisk 3 eggs and add to the meat mixture. Add vegetables. Keep working all of the Cajun-veg mix into the meat until all is blended well.

Spray a sheet pan with some non-stick cooking spray. Next, using your hands, form your meat mixture into a loaf on the sheet pan. Make the loaf around 6-8 inches wide and about 1 1/2 inches tall.

In a small bowl or measuring cup, mix together 3/4 cup of ketchup with about 2 tbsp. of honey. Slather this sauce over top of the whole meatloaf.

Place into a 400 degree oven for 40-50 minutes.

BEST meatloaf I’ve ever had (sorry, mom). I will say the repetitive chopping motion killed my hands, but that won’t stop me from making it again. Just gotta pull out my food processor

Not a meat eater myself but made this for the family just yesterday.
While it’s not something I would classify as ‘cajun’ everyone seemed to enjoy it!
A HUGE recipe (that I forgot to scale down) so I hope it freezes well

Yum,Yum. The best meatloaf I’ve ever made and the husband loved it. Very moist and packed full of flavor, I loved the sweet, sour topping with the heat of the meat mix. I only added a little more then a cup of gluten free bread crumbs.

This is our new favorite meatloaf recipe! I took others advice and halved the recipe and it still made a huge loaf. Loved the sweet flavor from the ketchup and honey topping against the spicy flavor in the meat. I used a sleeve of saltines instead of bread crumbs and two eggs and the consistency was perfect.
