Description

Apples soaked in brandy, battered and fried. Need I say more?

Ingredients

  • 4 whole Large Apples
  • 1 cup Sugar
  • ¼ cups Brandy
  • 1 Tablespoon Cinnamon
  • 1-½ cup Flour
  • 1 pinch Salt
  • 1 cup Milk
  • 2 whole Eggs, Separated
  • 2 Tablespoons Butter, Melted
  • Oil Or Reconstituted Clarified Butter For Frying
  • _____
  • FOR DREDGING:
  • ½ cups Sugar
  • 1 Tablespoon Cinnamon

Preparation

Peel and core apples. Slice into thin rounds. Mix together sugar, brandy and cinnamon. In a shallow pan, pour brandy mixture over apples. Let sit for 30 minutes, turning apples halfway through.

In a large bowl, sift flour and salt. Beat together milk and egg yolks and stir into flour. Then collect 3 tablespoons of the brandy mix from the soaking apples and add it to the melted butter. Mix into the batter. Beat the reserved egg whites until frothy and carefully stir into the batter.

Pour oil about 1/4″ deep into a frying pan and heat to 360° F. Dip apple rings into the batter and place in oil. Fry for 60 seconds, flip and fry other side for an additional 60 seconds. Using tongs, remove apple rings to a rack and drain.

Drag warm rings through a mix of 1/2 cup sugar and 1 tablespoon cinnamon. Serve immediately.

Makes 10 servings if you all eat about 4 slices.

These were amazing! Made them for my husband yesterday and he ate 4 pieces. Would be very easy to set up an assembly line for a larger group. Thank you for sharing!

My grandmother used to make these without the brandy. They are delicious!!! Thanks for the reminder!
