Description

Individual molten lava cakes made in muffin tins. Perfect for your next Girls’ Night In!

Ingredients

  • 6 ounces, weight Unsweetened Chocolate
  • 6 ounces, weight Semi-sweet Chocolate
  • 1-¼ stick Butter
  • ½ cups Flour
  • 1-½ cup Powdered Sugar
  • 3 whole Large Eggs
  • 3 whole Egg Yolks
  • 1 teaspoon Pure Vanilla Extract

Preparation

Preheat oven to 425 degrees F.

Grease 12 muffin tins. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate mixture. Stir in the eggs and yolks until smooth. Stir in the vanilla.

Divide the batter evenly among the muffin tins. Place in the oven and bake for 11 minutes. The edges should be firm, but the center will be runny. Run a knife around the edges to loosen and invert onto dessert plates. Serve with chocolate syrup or hot-fudge-drizzled plates, a scoop of ice cream and a sliced strawberry! Sprinkle with powdered sugar.

I made these as an early Valentine’s Day treat. Easily the BEST desert I’ve ever made. My husband and daughter said we could sell them – they are that good. The best part yet – amazing results with such little effort!

I made these for Valentines Day for my husband and children and served them with vanilla ice cream and sliced strawberries. I even drizzled their names on their plates with hot fudge before I plated the cakes. They were a huge hit!

I made these the other day with my friend who wanted to bake “something romantic”. I immediately thought of lava cakes, and when I found this recipe I was excited.

However, after making them I was a little disappointed. We baked them for the amount of time that the recipe said, and there was no gooey center at all. The cakes were so chocolately that I honestly didn’t like eating them, even though we had them with vanilla ice cream, whipped cream, and raspberries.

Now while our initial go at this recipe yielded subpar results, we will be trying it again, making sure to bake them 8-10 minutes instead of the recommended 11.
