Description

In our family I especially enjoy grilling fresh local peaches. It’s simple to prepare, not to mention how fancy they look plated.

Ingredients

  • 2 whole Fresh And Ripe Peaches
  • ½ cups Fresh Ricotta Cheese
  • ½ cups Balsamic Vinegar
  • ¼ cups Brown Sugar
  • 4 sprigs Fresh Mint Leaves

Preparation

Oil the grate (grill) and heat on medium-high. When the grill is nice and hot, grill each half peach for 4-5 minutes per side. Placed peaches on a plate with the cut side facing up. Place a dollop of approximately 2 tablespoons of fresh ricotta cheese in the center of each peach half and drizzle with the balsamic reduction. Garnish with a sprig of mint. Enjoy!

Directions for the balsamic reduction:

Cook the vinegar/brown sugar mixture down on medium-high heat until it is reduced by half, approximately 3 minutes. Remove from heat and allow to cool before serving.

What a treat!! I made these a while ago they looked just too good to pass up…and SO gourmet. I had mine with ricotta and my husband had it with whipped cream (he’s a finicky eater). All around fantastic and impressive.

Had made ricotta from another recipe, but the grilled peaches looked interesting. Oh My, awesome in my best singing voice! I didn’t let the Balsamic reduction cool and thicken, so the following night called for some more grilled peaches with the now chilled and thickened leftover balsamic, it was like a whole new recipe. Awesome, Awesome…I’m spreading the word! Thanks for sharing!

This is exactly the recipe I was looking for, had this at Alamo drafthouse here in Austin. Died and went to heaven. Just made homemade ricotta for this recipe. I take that back. NOW I’ve died and gone to heaven.
