Description

Rich chocolate mousse with a lovely hint of pomegranate.

Ingredients

  • 2 Tablespoons Cold Water
  • 1 envelope (1/4 Oz.) Unflavored Gelatin
  • ¼ cups Boiling Water
  • ½ cups Dark Cocoa Powder
  • 1 cup Sugar
  • 2 cups Heavy Whipping Cream
  • 5 Tablespoons Pomegranate Juice

Preparation

Pour the 2 tablespoons cold water into a small bowl. Pour in the gelatin. Meanwhile, bring 1/4 cup water to a boil. Pour it into the bowl and stir to dissolve the gelatin completely.

In a medium bowl, whisk together the cocoa powder and sugar. Pour in the whipping cream. Beat on medium speed until stiff peaks form. Pour in the gelatin mixture and pomegranate juice and beat until well-blended.

Spoon into dessert dishes and refrigerate at least 30 minutes before serving. Serve with whipped cream, pomegranate seeds, and pomegranate syrup for garnish.

This is SOOOO good and super easy. I omitted the pomegranate, only because my hubby is not a fan and just went for straight chocolate. I served it with home made whipped cream and raspberries and a tiny sprig of mint.

I didn’t have dark cocoa powder but used regular and OMG was this *divine*. So completely simple to make and just fabulous on every count. My husband is pacing the fridge waiting for them to set up. LOL Thanks for sharing…this was a true keeper~!
