Description

I always thinks flavors from the other side of the world will be impossible to replicate at home. I have an unhealthy affection for Thai curry, and after countless take out orders, and asking the advice of world traveler friends, I decided to try my hand at an “Americanized” version of my obsession.

I use this sauce for everything! Soup base, thickened and served over chicken, pork, beef, and even tomato salad.

Ingredients

  • 1 Tablespoon Oil
  • 1 Tablespoon Ginger, Minced
  • 1 clove Garlic, Minced
  • 1 whole Jalapeno (seeded & Minced)
  • 1 can (14 Oz. Can) Coconut Milk
  • 1 teaspoon Sugar
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Fish Sauce/Hoisin/Oyster Sauce (Soy Sauce Could Work, But Not Ideal)
  • 1 dash Salt And Pepper
  • ½ bunches Cilantro, Minced

Preparation

1) Heat oil in a soup pot. Add ginger, garlic, jalapeno and heat until soft but not brown, approximately 2 minutes.

2) Add coconut milk, sugar, lime juice, fish sauce, salt, pepper and minced cilantro. Stir to combine. Let simmer and thicken for approximately 5 minutes.

3) Use a hand (immersion) blender to combine and reach a smooth texture.

Serve over poultry, fish, pork, beef, roasted vegetables, fresh tomatoes, or salad. Also great base for soup.
