Description

Pancakes that taste like cake. ‘Nuff said?

Ingredients

  • 2 cups Milk
  • 1 Tablespoon Lemon Juice
  • 2 whole Bananas
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Honey, Fluid
  • 4 Tablespoons Melted Butter (plus Extra For Cooking)
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 cup Blueberries
  • 2 Tablespoons Flour
  • 1 Tablespoon Sugar

Preparation

Combine milk and lemon and set aside.

Mash banana and mix with eggs, extract, sugar, honey, and butter.

Sift together dry ingredients. Combine banana mixture and milk mixture, then add to dry ingredients. Mix until just incorporated. Let sit covered for 5-10 minutes.

Heat pan on medium high heat. Coat with butter.

After coating blueberries with the remaining sugar and flour, add them to the batter and fold together, being careful not to mix any more than you have to.

Dump 1/4 cup fulls of batter into the pan and flip when bubbles start around the edges. Cook on the other side until golden brown. Remove from the pan, re-coat the pan with butter in between batches, and continue with the remaining batter.

Serve with maple syrup and a big cup of coffee!

My boys loved these pancakes. I have made them twice. I substituted chocolate chips for blueberries the first time. Big hit.

These are great! My little boy will now only ask for THESE pancakes & he eats them faster than any other breakfast!

3 out of 4 loved this! That is saying a lot since we usually don’t get those kinds of odds when it comes to food. These pancakes reminded me of ones I had at Egg Harbor years ago and I haven’t been able to find a duplicate recipe until now.

I also made it with whole wheat flour and they turned out very yummy. Thank you.

I made these this morning, to rave reviews from my hungry guys. I wanted to try whole wheat flour as another reviewer did, but didn’t have any, so that will be my next experiment. Also, I think throwing in a few walnuts right before flipping would be magical! Kind of like banana-walnut bread with blueberries! Yum!

Pancakes are my favorite breakfast food and I LOVED these! I made them for dinner lat night and my 14 month old and husband (who is normally a french toast guy) both loved them. It made alot so we’ll be having the leftover for breakfast tomorrow :)
