Description

Fatty shared his grandmother’s cheesy scrambled egg recipe. And with Fatty’s permission, I’m sharing them with you now.

They are utterly delicious: unadorned, unpretentious, and unapologetic. Comfort food to the max.

Ingredients

  • 3 whole Eggs
  • 1 Tablespoon Evaporated Milk
  • 1 pinch Salt
  • 1 Tablespoon (to 2 Tablespoons) Butter
  • 1 slice Extra Thick Velveeta Cheese

Preparation

Heat small skillet over low to medium-low heat.

Mix eggs, evaporated milk, and salt together until thoroughly combined.

Add butter to skillet, swirl to coat. Pour in eggs. Tear cheese into pieces and add to the eggs.

Stir eggs gently as they cook. When cheese is totally melted, eggs are done.

Eat by themselves or serve over toast.

My son’s fave but I use Deli sliced (thick) American cheese because Velveeta just doesn’t taste the same to me anymore. May be my taste changing with my age. For myself, I add grilled chopped onions.

Fatty’s eggs are phenomenal (notice, I chose to forgo the very obvious pun here…that’s how seriously delicious these are!). I definitely make these often – they are my go-to comfort dinner when I’m home alone! The more butter, the better, although I think it’s a fine balance between reaping the benefits of the eggs vs. heart attacks…And ps, if you add bacon, all the better, I call them “bad eggs”, because they can’t be good for you!
