Description

Forget the flipping. Try these mini pancake muffins dipped in maple syrup for fun.

Ingredients

  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 2 Tablespoons Sugar
  • ⅔ cups Buttermilk
  • 1 whole Egg
  • 2 Tablespoons Pure Maple Syrup
  • 2 Tablespoons Melted Butter
  • ½ cups Milk Chocolate Chips
  • More Maple Syrup For Dipping

Preparation

Preheat oven to 350 degrees.

Generously grease a 24 cup mini muffin pan with nonstick spray.

Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.

In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.

Add wet ingredients to dry ingredients and stir until combined.

Stir in chocolate chips. Reserve a few chips to sprinkle on the top of muffins before placing in the oven.

Bake for 8-9 minutes.

Makes 24 mini pancake muffins.

Let cool slightly and remove from the pan. You may need to use a toothpick around the edges to separate the pancake muffins from the pan.

Serve immediately with more warmed butter if you like and/or a small bowl of maple syrup for dipping.

Enjoy!

I made these last week and they were really good. My husbands dislikes the taste of maple syrup and even he liked them. Definitely a go-to morning grab.

Made these tonight and they were great! I made half with mini chocolate chips and half without. I brushed the tops of the plain ones with butter and sprinkled with cinnamon sugar. This is a fun recipe and a great way to have all the pancakes done at the same time!

I LOVE these!! They are so simple and so delicious. Anytime there is a dessert pot luck at work I make these, or just randomly for my coworkers and my family. They are the best!

These are amazing! I love how simple they are. And for little ones, they are easier to eat than using a fork with pancakes. :-) Thanks! I used pinch bowls for syrup dipping. This is going into regular rotation for sure!

My family also LOVES these! Awesomely easy and they make a quick and easy breakfast-on-the-go item!! I had to cook them a teeny bit longer, but besides that – easy-peesey! THANK YOU!

I made these the morning after my kids had a sleepover at our house. They were perfect because the kids loved them and they were so much easier than flipping pancakes for everyone. These taste great! Thanks for a wonderful recipe I will make again and again!

These are so delicious and easy to make. We all had fun dipping them into little cups of maple syrup. We made some with chocolate chips and some with chopped bacon mixed in. Both were super tasty!
