Description

Classic hummus with a hint of sun-dried tomato.

Ingredients

  • 2 cans (15.5 Oz. Can) Garbanzo Beans, Drained, And 1/2 Cup Bean Liquid Reserved
  • 2 Tablespoons Tahini (sesame Seed Paste)
  • 1 whole Lemon, Juiced (about 1/4 Cup)
  • 2 cloves Garlic, Chopped
  • ⅛ teaspoons Cayenne Pepper, Or To Taste
  • ¼ cups Homemade Sun-dried Tomato Pesto (in Recipe Box)
  • 1 pinch (generous) Salt And Black Pepper
  • ¼ cups Extra Virgin Olive Oil

Preparation

Put all ingredients (except olive oil) in the mixing bowl of a food processor. Begin processing and drizzle olive oil in as it blends. Continue to process until smooth and no chunks of anything remain. Transfer to a small bowl and serve with vegetables or pita wedges.

Makes about 3-4 cups of hummus.

I just had Sabra brand Sun-Dried Tomato Hummus today and it was amazing. I’m definitely going to have to try this recipe!

I must say, after loving the Sun-Dried Tomato Pesto like my long lost sibling, I was disappointed in this recipe. While it went together easily, I think I prefer more flavor. There seemed to be an overwhelming tinge of chickpea and tahini in this batch. I think if I do it again I’ll add more garlic and cut down on the amount of Tahini/Chickpeas.
