Description

Lettuce wraps are a good combination of savory, spicy and crunchy that I just love. Plus, they’re easy. This is a simple recipe for chicken cashew lettuce wraps. Top it off with your favorite hot sauce, basil or more cashews, and you’ll have a winner for sure.

Ingredients

  • 1 Tablespoon Rice Vinegar
  • 1 Tablespoon Brown Sugar
  • ¼ teaspoons Ground Red Pepper
  • ¼ teaspoons Ground Ginger
  • 1 teaspoon Sesame Oil
  • 2-⅓ Tablespoons Soy Sauce, Divided
  • 3 Tablespoons Canola Oil (or Oil Of Choice)
  • 2 pieces Chicken Breast (approx. 3/4 Lb. Total), Diced
  • 1 cup Diced Onion
  • 2 cloves Garlic, Minced
  • ¼ cups Cashews, Chopped
  • 8 leaves Greenleaf Or Iceberg Lettuce, Washed And Dried

Preparation

For stir fry sauce, mix together rice vinegar, brown sugar, ground red pepper, ground ginger, sesame oil, and 2 tablespoons of soy sauce, making sure to dissolve brown sugar. Set aside.

Heat canola oil in pan over medium to medium-high heat. Add diced chicken and brown (about 4 to 5 minutes). Remove chicken from oil. Add onions and garlic to pan and remaining soy sauce (1/3 tbsp. or 1 tsp.) to pan; brown. When onions and garlic are brown and tender, add stir fry sauce, browned chicken and cashews. Saute mixture for a few minutes and remove from heat.

Spoon chicken mixture into individual lettuce leaves. Add your favorite hot sauce, more cashews or basil.

This is in our rotation of must have meals each month. We have them as lettuce wraps or over rice. We all love this recipe and look forward to it. I do usually make more sauce.

This is a family favorite! I usually triple the sauce!! Great for lunches the next day!

This was delicious. I didn’t make the wraps but I put it over white rice. I added water chestnuts and topped the finished dish with chow mein noodles… YUM! I will make this recipe many more times! Thank you!

I made this tonight with a few modifications.

First, I used boneless chicken legs instead of breasts because that’s what I had on hand (I used four). Second, I made the sauce as speciffied, but it didn’t seem like it would be enough so I upped the quantities of everything by taste. A pinch more brown sugar, a couple extra shakes of sesame oil–you get the idea. I used pimenton instead of ground red pepper, again because that’s what I had on hand. I also added a splash of pineapple juice at the end for no real reason.

Lastly, I served this over rice instead of making lettuce wraps.

When I make these again I’m going to add some sliced carrots, celery, and maybe some scallions during the step where you brown the onion. I might also top it off with some snow peas.

FYI, since I didn’t make these into lettuce wraps my mileage might be different, but this DEFINITELY was not six portions. More like 3.

This was delicious and I can’t wait to make it again!

This was excellent. I doubled the sauce, used ground chicken instead, and added chopped water chestnuts for crunch. I’ll definitely make these again!

Wonderful recipe! I added sliced, quartered water chestnuts as well to the recipe for added crunch. We served with bean sprouts & thin rice noodles. Much, much, MUCH better than P.F. Chang’s recipe, which we find too salty. Definitely a keeper! Thank you!
