Description

Simple, delicious, and fast, these are the best nachos to make at home, and the quick homemade tortilla chips make all the difference in the world!

Ingredients

  • 6 whole Corn Tortillas
  • 1-¼ cup Canned Black Beans
  • 3 ounces, weight Shredded Mexican 4-cheese Blend, Or Enough Cheese To Just Cover The Chips
  • ⅓ cups Canned Black Olives
  • 3 Tablespoons Canned Tomatillo Salsa (salsa Verde)
  • 10 slices Jarred, Pickled Jalapeños (or However Many You Like), Diced
  • ½ whole Large White Onion (or 1 Small White Onion), Diced
  • 2 Tablespoons Cilantro Leaves, Roughly Chopped
  • 1 whole Small Tomato, Diced
  • 5 dashes Your Favorite Hot Sauce, Or To Taste
  • 1-½ Tablespoon Mexican Sour Cream (or Regular Sour Cream)

Preparation

Preheat oven to 400ºF (204ºC). Stack corn tortillas and cut into triangles, like a pizza. Place them on a baking sheet sprayed with nonstick cooking spray. Separate all the chips so that they’re all in one even layer and spray with cooking spray. Salt the chips and place in the oven for about 8 minutes or until lightly browned and crisped.

Top with black beans, cheese, black olives, and salsa verde. Put in the oven with the broiler on high for about 5 minutes or until the cheese has melted and started to bubble.

Take out of oven and add jalapeños, onion, cilantro, tomatoes, your favorite hot sauce to taste, and drizzle on some Mexican sour cream (or regular sour cream). Enjoy!
