Description

Everybody should know how to make veggie fried rice. Hands down one of the most delicious and easiest ways to use up leftovers. Ready in 12 minutes or less!

Ingredients

  • FOR THE SAUCE:
  • 2 Tablespoons Dark Soy Sauce
  • 2 teaspoons Vinegar
  • 2 teaspoons Olive Oil
  • 1 teaspoon Maple Syrup
  • FOR THE FRIED RICE:
  • 2 Tablespoons Oil, Divided
  • 2  Medium Eggs Or 1 Large Egg
  • 1 dash Vinegar
  • 1  Onion, Chopped
  • 2 cups Veggies Of Your Choice, Chopped Into Bite-sized Pieces
  • 3 cups Cooked Rice

Preparation

In a small bowl, mix together the ingredients for the sauce.

Get a pan to high heat. Add oil and pour in the egg(s). While scrambling, add a small dash of salt and vinegar. The egg should be done in about 1 minute. Set aside in a bowl.

Add remaining tablespoon of oil into the pan on high heat and add onion. Fry for about 30 seconds (if you use spring onions, add them in the end instead!). If you have any veggies, now is the time to add them to the pan. Stir fry for 3–5 minutes.

Reduce heat, add rice, sauce and eggs. Stir well. (If using spring onions, add them now.) Done!
