Description

white creamy goodness without the milk

Ingredients

  • 2 cups Raw Cashews
  • 3 cups Hot Water
  • 1 teaspoon Kosher Salt
  • ¼ teaspoons Black Or White Pepper
  • Nutmeg
  • ½ cups Flour
  • 2 Tablespoons Oil (I Use Olive)

Preparation

Soak the cashews in the hot water for a couple minutes. Put the nuts and water in a blender and puree. Depending on your blender you might have to do smaller batches. I use a vita mix and it handles it no problem. You may need to add more water as this gets thick.

Add the oil and flour to a pot as well as the seasonings. You want this to get bubbly, add the cashew liquid or “milk” and stir with a whisk. This cooks fast on high/med heat and gets thick. You may need to add some more hot water to get to the desired consistency. Also taste to make sure the seasonings are to your liking. You can add Fettuccine noodles for a great Alfredo with NO cheese
