Description

Very delicious vegetarian dish. Of course, you can also serve it as a side dish! So easy, so quick, it even looks pretty. And seriously, so good! I bet you’ll love it, because everyone who has ever tasted it does!

Ingredients

  • 1 pound Spinach
  • 2 pounds Ricotta
  • 5 whole Eggs
  • 2 Tablespoons Dill, Minced
  • 2 dashes Sea Salt
  • 2 dashes Black Pepper
  • 1 pound Cherry Tomatoes
  • ½ pounds Feta Cheese

Preparation

Preheat oven to 325 degrees.

Mix the spinach well with ricotta, eggs, dill, salt and pepper to taste. Pour it in a baking dish.

Cut the cherry tomatoes in halves and spread them with the cut surface on top on the spinach mixture. Sprinkle with crumbled feta cheese.

Bake for 1 hour.

you really have to try it out with the ricotta, it really makes the difference for the consistency of the dish!

Well it was 5:00 and per usual I had no plan for dinner. I had all of these ingredients except the ricotta so I substituted parmesan. It turned out very nicely. I’ll have to try it with ricotta next time! Thank you.
