Description

Pad See Ew is one of those dishes that easily falls into any of my favorite categories: one pot dishes, easy weeknight dinners. This simple recipe takes 20 minutes and only six ingredients. (But no one will ever know. It’s guaranteed to impress even the most discerning Thai food fans.)

Ingredients

  • 1 Tablespoon Vegetable Or Peanut Oil
  • 1 clove Garlic, Minced
  • 1 whole Small Shallot, Thinly Sliced
  • 5 ounces, weight Fresh, Wide Rice Noodles
  • 2 teaspoons Palm Sugar (substitute 1 Teaspoon White Sugar If Preferred)
  • 1 Tablespoon Soy Sauce
  • 20 whole Fresh Basil Leaves

Preparation

Note: The recipe serves one, but can easily be doubled. I don’t recommend making more than 2 servings at a time as it risks crowding the wok and resulting in a giant noodle blob. If you cannot find or prefer not to use fresh, wide rice noodles as in the original recipe, you can easily substitute thin, dry rice noodles. Just substitute 2.5 oz dry rice noodles for the fresh noodles. Soak the dry noodles in room temperature water until they become pliable (but not tender enough to eat), 10-12 minutes before beginning the dish. Because the noodles are soaked in water, the dish will need to cook a few minutes longer with dry noodles than with fresh.

1. Heat oil in a wok over medium-high heat. Add garlic and shallot and stir, cooking just until garlic begins to turn golden, about 1 minute.

2. Add noodles to wok and stir to break apart. Add sugar, soy sauce and basil, stirring vigorously to coat noodles evenly in the sauce. When sauce is bubbling and basil is wilted, about 2 minutes, remove wok from heat. Serve immediately.

You can likely find fresh wide rice noodles in most Asian markets, and I have even seen them in some large grocery stores that have decent Asian food sections. The basil is really wonderful in this recipe – there are so few other ingredients that its flavor really shines. Janet – I love the flavor of basil as well!

not only is this delicious, its one of my husbands favorite thai foods! so excited we can make it on the regular without having to go to a thai restaurant now!

I added some broccoli and chicken to the recipe, plus some thai chili and chili garlic paste to spice it up a bit (we like spicy). Loved it!
