The miso baste gives this eggplant a slightly tart but sweet flavor that is absolutely fantastic. The glaze only takes a few minutes to mix up. It’s quick, easy and delicious!
Combine first 8 ingredients in a medium sized bowl, stirring with a whisk.
Arrange eggplant slices on a rimmed baking sheet that you’ve coated with olive oil. Spread miso mixture evenly over the eggplant slices.
Broil 8-10 minutes or until topping is golden. Remove pan from oven. Arrange eggplant slices on a platter and serve!
Totally filling. I mean, one whole squash and 2 little eggs will easily feed 2. Also, the ingredients are so simple—this dish uses things we all have (or can easily get). Easy to fill and less messy than the other stuffed dishes! Sometimes my rice/quinoa/meat stuffed veggies end up spilling out and making giant messes. This sits wonderfully inside the acorn squash center and bakes just perfectly!
