Description

A delicious way to cook broccoli. Just put the whole recipe in a pretty bowl and call it dinner!

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 pinches Ground Pepper
  • 2 Tablespoons Parmesan Cheese, Divided
  • 1 teaspoon Lemon Zest, Divided
  • 1 pound Broccoli Florets
  • 1 pinch Salt

Preparation

Preheat oven to 375 degrees F.

Toss broccoli with olive oil, pepper, half of the cheese, and half of the lemon zest. Lay out on a greased cookie sheet. Roast for 15 minutes.

Pour into bowl and top with salt and the rest of the cheese and lemon zest.

Quite tasty. I added a quite a bit more lemon zest and had to roast the broccoli pieces for about 30-40 minutes. They got a little crispy and reminded me of baked kale chips. Thanks!

It also works well with harcort green beans! I roast almost all of my veggies this way and love it! I also use toasted garlic that I get at the local Market Street.

Yumm. I use almost this exact recipe, except I add in a couple cloves of garlic! Works great with zucchini and yellow squash and asparagus too!
