Description

Ratatouille is a great vegetarian dish. With such a fancy name I assumed it would be complicated to make, but it was actually super easy.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Medium Zucchini, Cubed
  • 1 whole Medium Summer Squash, Cubed
  • 1 whole Onion, Sliced
  • 1 whole Bell Pepper, Chopped
  • 1 whole Medium Eggplant, Cubed
  • 2 teaspoons Minced Garlic
  • 1 whole Tomato, Chopped
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Pepper
  • Parmesan Cheese, To Serve

Preparation

Heat olive oil in a skillet over medium heat and saute the zucchini and squash for 5 minutes. Then add the onion, bell pepper, eggplant and garlic and cook for a few minutes, adding more oil if needed. Stir in tomatoes, oregano, basil, salt and pepper and reduce the heat to low. Cook for 45-60 minutes for optimal flavor. Top with Parmesan cheese.

Sounds delicious! Your list was missing the tomatoes and garlic, which I added in based on what was on your blog post. Your blog post also mentions that you didn’t add in the eggplant, but since you included it in the ingredient list here, would you mind just indicating in the instructions when to add the eggplant if one were using it?
