Description

Delicious spinach burger topped with homemade thousand island dressing and grilled onions. A family favorite that’s easy to make!

Ingredients

  • FOR THE BURGERS:
  • 1 bag (16 Oz. Size) Frozen Spinach, Thawed, Drained, And Moisture Squeezed Out
  • 2  Egg Whites
  • 1 whole Egg
  • ¼ cups Finely Diced Onion, Shallot Preferred
  • ½ cups Shredded Cheddar Cheese
  • ½ cups Bread Crumbs (panko Or Regular)
  • ½ teaspoons Garlic Powder
  • 1 teaspoon Salt
  • 1  Red Onion, Thinly Sliced Or Diced
  • 4  Buns (or Option To Serve Over Mixed Greens)
  • 4  Slices Cheese
  • FOR THE DRESSING:
  • ½ cups Mayonnaise
  • 2 Tablespoons Ketchup
  • 2 teaspoons Apple Cider Vinegar
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Onion Powder
  • ¼ teaspoons Salt

Preparation

Chop the thawed and drained spinach into bite size pieces. Mix it with the next 7 ingredients (eggs through salt) in a bowl. Shape into 4 equal sized patties and cook over medium high heat in a non-stick skillet or stove top griddle coated with olive oil or cooking spray. Grill your onions at the same time! Cook burgers for 3-4 minutes on each side until golden and firm. Cook onions until softened and caramelized to your liking.

Remove patties from the skillet and place on a bun. Top with cheese, onions and thousand island dressing.

For the dressing: Mix all ingredients together. Enjoy!

Notes: This recipe can be easily doubled. Also, they can be made ahead of time and frozen for quick meals in a pinch!
