Description

Mushroom broccoli and ginger stir-fry.

Ingredients

  • 1  Red Onion, Finely Chopped
  • 2 cloves Garlic, Minced
  • 2 teaspoons Minced Fresh Ginger
  • 2 Tablespoons Olive Oil
  • ½  Red Pepper, Sliced
  • ½  Yellow Pepper, Sliced
  • 1 cup Broccoli Florets, Sliced
  • 250 grams Portobellini Mushrooms
  • 1-½ cup Water
  • 2-½ Tablespoons Soy Sauce
  • 2 teaspoons Cornstarch
  • 2 teaspoons Honey

Preparation

Fry red onion, garlic and ginger in the olive oil until fragrant and onion is translucent. Add peppers and broccoli, fry for about 5 minutes.

Brush any dirt off the mushrooms with a clean kitchen towel. (If you rinse them in water, you will lose some of the flavour.) Slice into 3mm thick slices and add to the onion and peppers . Fry for an additional 5 minutes on medium heat, stirring often to ensure even cooking.

Take the pan off heat and add water, soy sauce, cornstarch and honey. Stir in. Put the pan back over medium heat and cook for about 10 minutes, simmering until sauce is thick and glassy.

Serve with your choice of white rice.

Notes:
1. You can use any mushroom for this dish, or combination of mushrooms.
2. If the sauce gets a little too thick, just add a little bit of water to it until you are happy with the consistency.
