Description

This healthy sweet potato wrap is hearty, vegetarian, and full of good-for-you ingredients like black beans, brown rice, and a unique tahini sauce drizzled over it!

Ingredients

  • FOR THE SWEET POTATO:
  • 1 pound Sweet Potatoes, Peeled And Cut Into 1-inch Chunks
  • 2 Tablespoons Sesame Oil
  • ½ teaspoons Chili Powder
  • ¼ teaspoons Salt
  • ⅛ teaspoons Cayenne Pepper
  • FOR THE TAHINI SAUCE:
  • ¼ cups Tahini
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1-½ Tablespoon Lemon Juice
  • 2 Tablespoons Honey
  • 1-½ Tablespoon Water, More Or Less Until Desired Consistency Is Reached
  • 2 cloves Garlic, Finely Minced Or Pressed
  • ½ teaspoons Salt
  • FOR THE WRAP:
  • 1 whole Burrito Sized Whole Wheat Wrap
  • ¼ cups Baby Spinach
  • ¼ cups Cooked Brown Rice
  • ¼ cups Rinsed And Drained Black Beans
  • 4 pieces Roasted Sweet Potato
  • 3 Tablespoons Crumbled Feta
  • 2 Tablespoons Tahini Sauce
  • 2 Tablespoons Chopped Cilantro

Preparation

For the sweet potatoes:
Preheat oven to 375ºF. On a rimmed baking sheet, toss sweet potato chunks with oil, chili powder, salt, and cayenne pepper. Bake for 15 minutes, stirring halfway through. Raise heat to 400ºF and bake for an additional 5 minutes, or until golden brown. Let cool slightly. (You will only need 4 pieces of sweet potato for each wrap.)

For the tahini sauce:
Whisk together all sauce ingredients until well combined. (You will only need 2 tablespoons sauce for each wrap. Store remaining sauce in the refrigerator.)

To assemble the wrap:
Top whole wheat wrap with baby spinach. Sprinkle on cooked brown rice. Add black beans. Top with sweet potato chunks and sprinkle crumbled feta. Drizzle with tahini sauce and top with chopped cilantro. Wrap up and enjoy!

Notes:
1. Store ingredients separately in the fridge if you’re making these ahead of time. Assemble the day of.
2. I always cook my brown rice in chicken or vegetable stock for more flavor!
