Description

Easy and healthy! Can easily be doubled.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 cup Onions, Chopped
  • ¾ cups Carrots, Chopped
  • 3 cloves Garlic, Minced
  • 1 cup Green Bell Pepper, Chopped
  • 2 Tablespoons Chili Powder
  • 1-½ cup Fresh Mushrooms, Chopped
  • 1 can Diced Stewed Tomatoes, Undrained And Chopped (28 Oz)
  • 1 can Black Beans, Undrained (19 Oz)
  • 1 can Whole Kernel Corn, Undrained (11 Oz)
  • 1 Tablespoon Cumin
  • 1 Tablespoon Dried Oregano
  • 1 Tablespoon Dried Basil

Preparation

1. Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender.

2. Stir in green pepper and chili powder. Cook until vegetables are tender, about 6 minutes.

3. Stir in mushrooms, tomatoes, beans, and corn. Season (according to taste) with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium.

4. Cover, and simmer for 20 minutes, stirring occasionally

Serve with cornbread and optional cheese.
