Description

Guacamole is clearly the best part of any taco. Why not make it the main filling!

Ingredients

  • ½ whole Avocado
  • ½ teaspoons Lime Juice
  • 1 teaspoon Fresh Cilantro, Minced
  • 2 slices Pickled Jalapeno, Minced
  • Salt To Taste
  • 2 whole Taco-sized Tortillas
  • 1 teaspoon Butter
  • Sour Cream, To Serve

Preparation

1. Mash the avocado, lime juice, cilantro, and jalapeno together with the back of a fork. Season with a pinch of salt. Divide between the tortillas and fold each in half.
2. Heat a skillet over medium-high heat. Melt the butter, then add the tacos. Cook on one side until golden brown, then flip and cook the remaining side. Serve with sour cream.
