Description

One day, refreshing and healthy cold soba noodles met a tasty ginger-peanut sauce, and they lived happily ever after.

Ingredients

  • 4 ounces, weight Soba Noodles (1 Bundle)
  • ¼ cups Chopped Green Onions
  • 1 Tablespoon Peanut Butter
  • 1-½ Tablespoon Toasted Sesame Oil
  • 1-½ Tablespoon Rice Wine Vinegar
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Freshly Grated Ginger
  • ½ teaspoons Sugar
  • ¼ teaspoons Salt
  • 1 teaspoon Sesame Seeds

Preparation

1. Cook noodles in boiling water until tender. Remove immediately and place in an ice bath to stop cooking and shock the noodles. Drain and set aside in a bowl.

2. In a small bowl, combine the peanut butter, sesame oil, soy sauce, vinegar, ginger, sugar, and salt; use a whisk to combine. Pour sauce over the noodles, add onions and sesame seeds, and mix well to combine.

This was a great dish! I had soba noodles at a restaurant recently and wanted to try preparing my own. The flavors in the sauce are very unique; it has a nice sweet-and-salty flavor. However, if you are watching your sodium I would recommend leaving out the additional salt, as the sauce is already salty enough from the soy sauce. You can always add more later if it needs it.
