Description

A delicious way to eat your abundance of tomatoes!

Ingredients

  • 4 whole Large Heirloom Tomatoes, Sliced
  • ½ teaspoons Coarse Sea Salt
  • ½ teaspoons Freshly Cracked Black Pepper
  • 1 cup Panko Bread Crumbs
  • ¾ cups Freshly Grated Asiago Cheese
  • 3 cloves Garlic, Minced
  • ¼ cups Fresh Chopped Parsley

Preparation

Preheat the broiler on your oven. I set mine to high.

Lay sliced tomatoes in a 9×13 baking dish, overlapping a few if needed. Sprinkle tomatoes with salt and pepper. In a bowl, mix panko, cheese, garlic and parsley with a spoon until combined. Evenly sprinkle panko mix over the top of the tomatoes. Broil for 2-3 minutes, or just until cheese and crumbs are golden. Watch carefully as the bread crumbs can burn quickly! Serve as a summer side dish, a salad starter, or a snack!

Oh Yum!!! This is such an easy recipe, but sounds like a wonderfully delicious way to use those garden fresh tomatoes. Can’t wait to try it! Thanks for sharing.

Forgot to buy parsley so I left it out. No matter though, my parents loved it!

I somehow inherently knew this was not going to work for me but I made it anyway. I followed the recipe to a t.

I love the topping and of course, like everyone I love heirloom tomatoes but this didn’t do it for me.

Next time, I will use the topping over my roasted plum tomatoes in the winter months. That will be delicious so all love is not lost. Heck I may even suggest to others that you make this – but drizzle a very little olive oil on the tomatoes with the s/p and broil them a touch before adding the topping and returning to the broiler as prescribed.

Was I missing something?
