I made this for my lunch today and LOVE LOVE LOVE it. It’s such a fresh tasting dish! I can’t wait to make it again!

I made this for my husband last night and he ate 2 huge bowls full! It was delish, I omitted the egg and used Earth Balance instead of butter to make it vegan. I will for sure be adding this to the rotation!

I loved this! I cut it in half and invited a friend, and we both decided it’s a keeper. I’ve made it again since then. I like that it’s so good warm but also makes an amazing leftover salad for lunch.

I left out the egg and avocado for calorie diet reasons, and overall I thought the dish was okay. I think it needed the avocado. My mother and sister really liked the dish and have both asked for the recipe!

This dish was so simple and delicious!! I ate it warm for dinner and had some leftovers cold the next day for lunch. I will definitely be making it again soon
