Description

I love simplicity on a weeknight. And though the plethora of ingredients in this recipe may lead you to believe that it’s complicated, it’s not! You cook the quinoa and simply stir everything else in. Voilà!

Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 whole Hard Boiled Egg
  • 4 whole Roma Tomatoes
  • 2 whole Avocados, And A Bit Of Lemon Juice To Prevent Browning
  • 1 bunch Cilantro (small Bunch)
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 can (15 Oz. Size) Corn, Drained
  • 1 whole Lime, Juice And Zest
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Sugar
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Melted Butter
  • 2 pinches Feta Cheese Crumbles (optional)

Preparation

1. Bring the water to a boil in a large pot. When boiling, adjust the heat to medium, add the quinoa, and cook (uncovered) for 15 minutes, until the water is absorbed. After 15 minutes, cover the pot and turn off the heat; let the quinoa sit and steam for 10 minutes.
2. Hard-boil the egg.
3. Dice up the tomatoes, hard-boiled egg, avocado (sprinkle the pieces with lemon juice to avoid browning), and cilantro. Drain and rinse the black beans, and drain the corn.
4. Zest and juice the lime, and whisk the zest and juice with the salt, pepper, sugar, olive oil, and butter to form a dressing.
5. Once the quinoa is done, mix everything together and warm over low heat if desired.
6. You can eat this dish hot or cold. Sprinkle with feta if desired. Enjoy!

This dish was so simple and delicious!! I ate it warm for dinner and had some leftovers cold the next day for lunch. I will definitely be making it again soon

I left out the egg and avocado for calorie diet reasons, and overall I thought the dish was okay. I think it needed the avocado. My mother and sister really liked the dish and have both asked for the recipe!

I loved this! I cut it in half and invited a friend, and we both decided it’s a keeper. I’ve made it again since then. I like that it’s so good warm but also makes an amazing leftover salad for lunch.
