Description

A super filling dish.

Ingredients

  • 2 whole Large Sweet Potatoes
  • ¼ cups Vegetable Broth
  • 1 cup White Onion, Chopped
  • 2 cloves Garlic, Minced
  • 2 teaspoons Cumin
  • 1 teaspoon Oregano
  • ¼ teaspoons Cinnamon
  • 1 teaspoon Lemon Juice
  • 1 whole Chipotle Pepper In Adobo Sauce, Diced (or 1/2 Pepper For Less Spice)
  • 1 can Black Beans, (15 Oz) Drained, Not Rinsed
  • 2 teaspoons Butter
  • ½ cups Cheese Of Choice, For Topping

Preparation

1) Preheat oven to 400 F.
2) Clean and pierce sweet potatoes several times with a fork. Bake sweet potatoes in the preheated oven for 45 minutes or until tender.
3) In meantime, heat stove to medium. When hot, spray a pan with cooking spray and add vegetable broth.
4) Add onions and garlic. Stir and let cook for 4 minutes or until onions are translucent.
5) Add seasonings, lemon juice, chipotle pepper and black beans. Stir well. Turn down heat and let simmer until potatoes are finished cooking.

To Serve: Split top of potato lengthwise and place one pat of butter inside of each. Spoon chipotle black beans into potatoes, then top with your choice of cheese.
