Description

Don’t let those black bananas go to waste!

With a couple of over ripe ‘nanas and some store cupboard essentials, you can quickly and easily rustle up this delicious vegan banana bread.

It is seriously the best addition to a cup of tea, too!

Ingredients

  • 4 whole Black Or Very Spotty Bananas
  • 75 grams Olive Oil
  • 100 grams Brown Sugar
  • 225 grams Plain Flour
  • 3 teaspoons Baking Powder
  • 1-½ teaspoon Ground Cinnamon
  • 1-½ teaspoon Ground All-spice
  • 50 grams Dried Fruit Such As Raisins, Sultanas Or Dried Banana Chips
  • 1 teaspoon Vegan Spread Or Oil For Greasing The Tin

Preparation

Peel the bananas and mash in a large bowl. Add oil and sugar and mix well. Add flour, baking powder and spices, and combine well. Mix in dried fruit or nuts.

Grease and line a loaf tin with baking paper. Pour the mixture into the tin. Bake for 20 minutes, then check for colour. If the loaf is browning too quickly, cover with foil before returning to the oven for another 30–40 minutes. I usually check at around the 30-minute mark so as not to overcook.

Allow to cool slightly in the tin, then remove and place on a wire rack.

This banana bread is deliciously moist and moreish and is perfect warm fresh from the oven or cold with a delicious cuppa.
