Preheat the oven to 350°F (175°C).
In a small bowl, combine the almond flour and the whey protein and mix well.
In a large bowl, combine the butter, erythritol and toffee-flavored Stevia. Add the flour mixture to the butter mixture.
Mix well with a hand-held mixer so that everything is well combined and the dough is smooth without any clumps.
Shape the dough into small walnut-sized balls. Place them on a baking sheet lined with parchment paper and flatten them with wet fingertips.
Bake for 5-7 minutes, or until golden brown. Be careful, the cookies get too brown very easily.
Remove the pans from the oven and let the cookies cool completely before removing them from the pans. (Important!)
Store in a cool and dry place.
