Description

This easy low carb dinner roasts in one pan.

Ingredients

  • Olive Oil, As Needed
  • 1-½ pound Golden Potatoes, Quartered
  • Salt And Freshly Ground Pepper, To Taste
  • 1 package (13 Oz. Size) Kielbasa, Cut Into 2-inch Chunks
  • 1  Large Onion, Quartered, Keeping The Layers Together

Preparation

Preheat oven to 450ºF. Spray a large foil-lined baking sheet with oil spray. (Foil makes for easy cleanup.)

Place potatoes in a large bowl. Sprinkle generously with salt and pepper. Drizzle in a little olive oil and toss to coat.

Add kielbasa to the potatoes and toss together. Pour out onto prepared sheet pan.

Spray onion quarters with oil spray on both sides and sprinkle with salt and pepper, making sure to keep the layers together. Nestle them gently onto your pan among the sausage and potatoes.

Roast about 30 minutes until meat and potatoes are browned and potatoes and onions are tender.

This was a very well received meal, and easy! I took Nancy’s suggestion and added carrots and parsnips to the mix. May add chopped red bell pepper next time. Thank you for posting this recipe!
