In a small bowl mix, together the cocoa powder with the honey and coconut oil. Add the vanilla extract and salt and mix until well combined. The mixture will be a very thick paste. Add the agave inulin and mix until combined and can form the mixture into a big ball. Chill the mixture in the refrigerator for 10 minutes. The mixture will still be a little soft. Put some coconut shreds in a shallow bowl. Remove the dough from the fridge, roll it into small balls and coat with coconut shreds. Place balls on a tray. Refrigerate any leftovers.
