Description

Make your own protein bars with this simple recipe!

Ingredients

  • 1 whole Small Banana, Mashed
  • 2 Tablespoons Honey Or Agave Nectar (optional Or To Taste)
  • 1 Tablespoon Coconut Oil
  • ½ cups Natural Peanut Butter
  • ¾ cups Oat Flour (or Whole Wheat Flour)
  • ½ cups Quick Oats
  • ½ cups Shredded Unsweetened Coconut
  • 8 Tablespoons Vanilla Whey Protein Powder
  • ¾ cups Semi-sweet Or Dark Chocolate Chips (optional)
  • ½ teaspoons Vanilla Extract (optional)

Preparation

Combine the banana, honey, coconut oil and peanut butter in a bowl.

In a separate bowl, combine the oat flour, oats, coconut and protein powder.

Stir the dry ingredients into the wet ingredients until well-combined.

Prepare a baking sheet by lining it with foil or wax paper. Divide the batter into 8 equal-sized portions. Shape into bars and place on the baking sheet. If not using chocolate, transfer directly to the freezer or fridge.

If you want to add the chocolate topping, melt the chocolate in the microwave (melt for 30 seconds at a time, stirring in between each additional heating) or over a double boiler. When melted, remove from heat and stir in the vanilla extract. Spoon the chocolate over each bar and then place into the freezer or fridge.

Whey is derived from dairy, so this is not a vegan recipe as is (you’d have to use soy or hemp protein powder!)
